Frog legs : taste like Chicken

There are some places like the Jin San buffet in Lawrence, KS and elsewhere that have frog legs on their menu. I've tried them. I can't say they taste like chicken. They are not special to me. All I can remember was a cartoon in which a kitchen is open. Out comes a frog on rollers with half its body -missing its legs. Anyway here is a frog recipe if you like eating them

It's time for Creole or Cajun Jambalaya

What is the difference between Cajun and Creole? A search for recipes helped me answer this question and find more.
I had beef franks which I broiled. I also had chicken so it was time for Jambalaya which I never have really made. To me it is like the dish Latin Aroz con Pollo

(1) Both are strongly French, the Creoles and the Cajuns came to Louisiana by different paths.
(2) I heard that Creole has Chicken and/or beef and vegetables.
(3) In this internet the following was said.

Cajun includes seafood and more. Creole (jambalaya) tends to be reddened with tomato, while Cajun jambalaya tends to be brown and lack tomato.

I started looking through my cookbooks and the internet. I found in the Kosher Creole Cookbook (by Mildred L. Covert and Sylvia R. Gerson) . The chicken and sausage jambalaya looked good. The turkey one I would try another time. I did not try this one which included chopped tomatoes.

Tony Chachere's Cajun Country Cookbook ( I used to watch his TV shows) had a similar one Tomy's Chicken and Sausage Jambalaya. This is the one I went with which had also celery, onions, bell pepper, creole seasonings, onions and more. I also paprika and more

I made that recipe in crockpot and the the ingredients melded together, the rice with everything. Tasty, the meats infused into the stew and more.

Rancho Huevo at Milton's in Lawrence, KS


I ordered the Rancho Huevo at Milton's in Lawrence, KS (home of KU and the Jayhawks) mainly because I heard about this dish but never had it. The restaurant (ranked #1 breakfast and #2 coffee in Best of Lawrence open (B, L, D)) really has some great coffee and best brunche offerings.

Variety of good food at reasonable prices and always packed. Huge french toasts, different piza, hunge calzones,
I had made recipes like this. What really was good about this recipe in the wrapped tortilla was it added guacamole and sour cream to the eggs with hot sauce which gave it a different consistency. The fried potatoes with it were meager but okay. I got Black Mountain coffee blend which is smooth (the name coincidentally is the name for the little town I landed in North Carolina in 1973 to continue my tennis career). My son got the lox and egss which he likes. We shared the hummus which was chunkies then usual and also nicely came with thinly sliced yellow and red bell peppers, marinted artichokes and black olives.

I will have to try the Ranchero sauce on my own. I found from my book
Coyote Cafe by Mark Miller. We did not go to his place
Coyote Cafe when we were in New Mexico (another story in my blog about the meals I ate there in the future) but I like his book and am using it more and more. I really like the extra little stories and insights he tells about each recipe.

Ranchero Sauce From Coyote Cafe Ingredients
5 lb Roma tomatoes 2 tb Peanut oil, (or lard)
6 Serrano chiles 6 Poblano chiles, roasted,
2 c White onion, finely chopped 1 bn Cilantro, tied
2 tb Garlic, finely chopped 2 ts Salt
Instructions for Ranchero Sauce From Coyote Cafe
Lightly blacken tomatoes and serranos in a skillet or under a broiler (about 4 to 5 minutes). Chop together and set aside. Saute onion and garlic in the oil over low heat until soft but not brown (about 10 to 15 minutes). Combine all ingredients in a saucepan (reserving a few strips of poblano chiles for garnish). Cook partially covered over low heat for 20 to 30 minutes, adding water if necessary. Remove cilantro. Garnish with the reserved julienned poblanos. One of Millers favorite sauces, similar to one served at Capri in San Cristobal de las Casas, in southern Mexico It is a rustic-style sauce that traditionally is cooked in the morning and is used throughout the day. Ranchero Sauce goes with eggs, chicken, pork, tamales, and seafood. Mark Miller, Coyote Caf? Favorite beef dish?

I guess I can't complain with the vote. But I thought burgers would have been higher. I chose steak. But if this poll is true why all of a sudden some restaurants are trying to entice burger lovers like Ruby Tuesday. Bad yeard burger does well here but I think Red Robin is way too high for the price.

Food channel Sunday disaster 7/15/2007

Well I could not believe as I watched the Food Channel Sundays (8:00 CT) Food Network 7/15/2007 for several reasons. Probably many others who watched the Food Channel Sundays (8:00 CT) Food Network star - to get down to final 2 contestants) could not believe it either.

The field was narrowing to 2. During this show in particular, the judges said that the final two would be decided by the 7/15/2007 happenings and results but also the previous events etc and what happened with each contestant. This included what the judges felt about the food and recipes cooked; their experience " under fire" and how they performed under certain conditions to test their Food Network star skills to do their own show.

Based on all of that, the two women should end up in the finals (Rory and Amy).
However the Food Network judges disregarded all this to pick Jag (but there is more read on ) to team against Rory.

Amy was more polished all the way through all of the shows with her food, acting, meeting the needs of the show etc etc etc. Her on the fly telling about what is going on with the iron chef like battle was said to "thorough and polished." Her recipes, food, home style girl attitude and more were given high marks. She had said she wanted to quit a show or two before but that was just nerves or etc.

Rory was hanging by a thread because of her attitude sometimes, her attitude during tasks given and even some food. Her food was a star this night however. She was the in the last two several weeks but "made the cut."

Jag all along has medicor food, did a caribbean recipe but could not name what ingredients were found in his or any carib recipe (geezzzzzzzzzz!!!) was a crybaby in one session in particular . His did not do as well on camera in all facets.

Still they picked Jag over Amy. I was stunned. But there is more.

Jag resigned after that because his army and culinary was not what was posted and what he talked about. How stupid is that!!! He did not deserve to be in the final 2 anyway. Potential yes but supposedly the network big wigs said the final etc would be rated on what they did and did not do not potential although that factored in for the show .

In struts Amy to take the place of Jag. That is the way it should have been. I just don't know what they were thinking.

The voting is over and we will see who wins. I hope it's Amy. Rory will be okay (last years finalist should have been canned a few shows before- the current guy is great).
