Plantain Soup with Corn and Chili

This recipe was in my Hot & (red hot and sizzling dishes) Spicy by editor Linda Fraser. I wanted to try a plantain recipe. It was very simple recipe and I let it boil on simmer for longer then 10 minutes which was recommended. It came out better then expected. The platains permeated the soup and the tarragon added a little extra flavor with the green chilis. Instead of mexican chilis in the jar, I used chopped jalapeno. It was even good on spaghetti. 9.2/10
